Fruit Pizza
One of my favorite Spring and Summer desserts is Fruit Pizza. Other than my Dad, I don't know another human who doesn't L-O-V-E it. Wierdo Daddy says it's a waste of good fruit. Spoken like a true skinny person, I suppose!
Anyway, for the rest of us, who know that the only thing better than fresh fruit is fresh fruit with cookies, here is my favorite Fruit Pizza recipe.
This recipe for a normal pizza pan or stone size, like this:
But, look at this cute idea! Mini Fruit Pizzas: (For the minis pictured here, I used store bought cookie dough instead of the dough recipe below. Either one will work!)
You will need:
Dough:
½ C Butter, softened
¾ C White Sugar
1 egg
1 t Vanilla Extract
1 ¼ C All Purpose Flour
1 t Cream of Tartar
½ t Baking Soda
¼ t Salt
Icing:
8 oz Cream Cheese, softened
1 C Confectioner's Sugar
1 t Vanilla Extract
Topping:
Assorted Seasonal Fruit
White Sugar
This is so easy it's almost sinful!
Preheat the oven to 350, and gather the dough ingredients.
Cream together the Butter and Sugar, then mix in the egg. Stir together all of the dry ingredients, then mix into the butter mixture.
Then, just press the dough onto your ungreased pizza pan (or roll and cut into bite size cookies) and bake for 8 to 10 minutes (less for mini pizzas!). You want it to be very lightly browned. Not too brown!
Set the cookie(s) aside to cool and mix up your icing ingredients – just mix together the Cream Cheese and Sugar, then stir in the vanilla.
Once the cookie is cool and you are ready to serve the pizza, spread on a layer (thick or thin, your preference!) of the Cream Cheese Icing.
Top it all off with assorted fruit to your liking. Depending on the sweetness of the fruit, you may want to
sprinkle a little white sugar on top.
Serve immediately or refrigerate.
